I am looking for a component or linear IC to regulate AC voltage (230V) to 80 VAC just as in DC supply (e.g Regulator 7812).

nothing that I`m aware off without significant support circuitry, at face value your request seems a simple one, whereas it`s quite a non trivial task.
there are a few options open to you however, most all will require the use of an inductor of some description, the Simple ways would be to just use a suitably rated Primary/secondary transformer, Or the use of an auto transformer, the Auto transformer has the advantage in that they are usually cheaper as they consist of a Single winding with taps along the windings to select your voltage (1/3 in your case as 80x3=240).
the other methods Still require a transformer, and can mess up your waveform considerably, modified SQR wave may be suitable for you? I don`t know.
you Can use something like a Triac, but these seriously deform the waveform and will require wave shaping circuitry afterwards, differential error sense amps will be needed to feedback the output to the control circuit of your inductors primary driver.
I can`t really think of any other methods off the top of my head, but perhaps someone else here will know of a better way for you.

I am looking for a very simple circuit composed of few components. A triac, diac, inductor, resistor, capacitor are still okay. If only there is a linear IC which can do this work, I would be very happy.
I was thinking of a light dimmer (Voltage Regulator). I don't know if it will really work.

Back in the 40's there used to be a device called a saturable reactor transformer, made by Sola.Its regulation was poor, by modern standards and it generated a lot of heat. It would "never fly" today; because it wasted so much power.
A light dimmer is NOT a voltage regulator. It dims the lamp by switching the power to the lamp on and off 100 times a second (120 in US), varying the ON point on the AC waveform. The result is something that is not at all like a sine wave.
Why do you want 80V AC? I don't know of anything that runs on 80V AC. Does it need to be regulated or is a simple transformer sufficient? Does it have to be a sine wave? How much current do you need?
Remember DC voltage regulators are inefficient and dissipate lots of power. I guess you could make a regulator that took a supply slightly higher than 80V AC and used a DC regulator to track the mains sines. And doubled it up to cover the other half of the sine. But it will have the same power problems as a DC regulator.
