I think this is a great example to start with. It builds on turning on and off 1 LED, Then 3, then adding 2 more and a button creating a cross walk including the code behind it to make it all come together. Simple with pictures and detailed instructions. I plan on revisiting this project but instead of using a (Walk) (Don't walk) LED I want to use my 16x2 LCD screen to make some graphic or text appear and flash along with the yellow traffic light. Gordon has a few other examples of different Pi things you can try.

Check out the project which turns your Raspberry Pi into a FM transmitter.Which requires nothing more than a wire as antenna along with the Pi(no extra stuff needed). I was amazed by this.
I've just published details of my most recent project. It's a Christmas project featuring a talking Reindeer.
It's a bit late to start in time for this Christmas, but could be use with a different design so that it could be used all year round.
Another place to look for inspiration is the Raspberry Pi blog http://www.raspberrypi.org. The projects range from trivial ones useful for learning about the Raspberry Pi - to incredibly complex commercial setups, but there are plenty that fit in between.
