From what I have seen, Pure Data, appears to be a good choice.
I have not used any of these, but I did some research into Pure Data for a project and it looked like it had potential.
I agree with @Phil Hutchinson, look at what Toby Hedriks has done and I think that will answer your question.

I've a goal of creating a chaotic/ambient music generator (with pots, analogue sticks and buttons..) powered by BBB.
I've found out that there is a ton of software packages that could be capable of such a task and I'm having difficulties choosing.
My main criteria is that it would be as simple as possible, I dont want to spend much time learning it
